It is delicious. There's nothing tricky to do and the hardest bit is rolling the pastry but I've learnt a trick for that – put the pastry between two sheets of cling film when you roll it. The clingfilm stops it sticking to anything, you can roll it very thin, peel it from the work surface when done and easily put it in the flan case – just make sure you ease the clingfilm away before pressing the pastry into the flan case flutes.
