Lemon Cheesecake - Without The Lemon!

Today the children made a cheese cake. Due to our "fed up" elimination diet we couldn't flavour it with real lemon juice so we used a teaspoon of citric acid instead.

First crush up some additive free plain biscuits. Then mix them with melted butter and a little brown sugar and press into a dish. Refrigerate.

Next mix some additive free mascarpone and ricotta cheeses with some citric acid and a little sugar.

Spread over the biscuit base and chill.
